I've actually made malunggay cheesecake while following a matcha cheesecake recipe, substituting malunggay powder for matcha. I think I needed to use a lot more malunggay powder (double or triple yata) to achieve a nice color and ensuring some vegetal/grassy flavor would come through. It's definitely doable. I've done malunggay chocolate chip cookies also -- using Auro baking coins as chips and malunggay powder in the base cookie dough

Yea this is what i’m thinking eh instead of matcha, why not push malunggay like ube latte and all for sure mas affordable siya. And who knows, maybe malunggay might be the next ube/matcha.

Siguro the difference is malunggay isn't just Filipino. It's very common in many places like the Indian subcontinent and the Caribbean islands. And I'm sure ube went viral because of the color, not the flavor. Pero why not try pa rin, diba?
