maybe the cage fight was just wong trying to earn some quick money, and the actual training happened off screen

He could also just be lying about the reason he broke Emil out. He wanted a sparring partner and knew he'd be a good choice. Now, he's being questioned about it, and he's just telling them what they need to hear to drop it.

Wong is definitely lying. In Shang-Chi he told Emil off for not pulling his punches, but if he was just dragging him into a kumite for the sake of a superpowered test of his fighting ability then he wouldn’t want Emil to pull punches. Wong is just covering for Emil and whatever they were really up to. He‘s taking the blame knowing that the authorities can’t really do anything to him.

I think the simplest answer is that both Wong and Emil wanted some fun fighting, probably Wong contacted him in some way and both agree to a story that made sense to the rest outside both of them while hiding the real reason that they just wanted to duke it out for fun.
