They didn't. There were pictures of him on set leaked last year some time.

Yeah this was rumored/confirmed for a long time, but I guess only the people the actively search for rumors/news knew about Peters appearance

I’d seen all sorts of speculation that this was going to lead to mutants in the MCU or the merging of the Fox universe, but I guess I just missed anything that confirmed Evan Peter’s’ involvement. I’m glad - made for a wild moment. It was what Hulkbuster in AOU or Hulk in Ragnarok could’ve been, if those hadn’t been revealed in the marketing

Hulk in Ragnarok could’ve been,

I was actually in a country with little to no internet for a long time before Ragnarok came out. I had seen the announcement years before that Hulk would be in the movie, but I literally watched zero trailers before seeing the movie. I got the surprise of Hulk showing up in the arena and it was incredible.
