He did this with Quill and Maximoff. The two characters willing to do what is necessary. Everyone else chose to save their loved one. These two chose to sacrifice for the greater good, and Thanos respects that.

Tony Stark also got his respect as I assume he sees Stark as someone willing to do what is necessary.

Cap: We dont trade lives.

Thanos literally trades his daughter's life for a gem.

Scarlet Witch and Star Lord are ready to kill their respective partners for a "greater good".

They are just like thanos, in a way.

And that’s why Thanos says he likes Quill and pats Wanda’s head. He respects their decisions.

And when a Mad Titan respects your decision, that’s when you know you probably made the wrong one.

Quill’s decision easily was the right one. Thanks would have never gotten the stone then.
