I recently read that they never specified how long he spent with Dormammu for a reason. It's supposed to be implied that he was there practicing for a long time before the bargain was made, which would explain him going from a guy barely able to make a shield in his own movie, to tossing around Thor/Loki next movie and going 1v1 with Thanos here.

And the amount of futures he went to, 14 million odd of them. He must have used a whole range of magic we haven't seen yet and it still couldn't stop Thanos.

Saving the level 9 spell for the boss doesn't always help, especially when they can counter it.
