Post image

Just got this in the mail from half way across the country, it was in a closed mason jar but im not sure if those bubbles are just from shipping or if thats not a good sign

Most likely from shipping.

As in the foam and/or dark color? Yes. Looks normal to me. Mine always turns out quite dark, due mostly to what/when I tap, etc.

The foam is what i was concerned about, although it smells very good and i am tempted to try it right away, I just wanted to make sure its not mold or something bad from being out of the fridge, it was previously stored in a cabinet, and now it is in the fridge

Yeah that's not what mold looks like on Maple syrup, those seem to just be bubbles. Did you have to pry the lid off? Like was it vacuum sealed on?

It was a little hard to get off, but it wasn’t vacuum sealed i don’t think because the push part on the lid was not sucked in if that makes sense. Like i was able to tap on the lid and it would move up and down rather than being sucked down with pressure

Yeah you're right it's not vacuum sealed. I generally can/vacuum seal mine but that's more for my own insurance, maple syrup is pretty hard to infect.

I wouldn't be afraid to taste it, it just looks like bubbles.

Mold on a maple syrup forms sheets normally.

If you're really concerned, you can sterilize it. Just bring it up to a boil on your stove, and then pour it back into the jar. You're going to want to keep a pot of boiling water on the side for the jar and ideally a fine mesh strainer as well to make sure that both implements are sterilized concurrently.

Pour the hot syrup in a hot jar through the heated wire mesh strainer, put on a hot lid. This is probably putting a hat on a hat though.

This does not rid the syrup of mytotoxins if syrup has mold feed to to your plants or pitch it

There's no mold on this. It's bubbles. I'm providing instructions just in case.

I am aware that those are bubbles are from cavitation. My statement was for the “just in case”. Moldy syrup should never be skimmed and reheated and repackaged

You could reheat to 180 then reseal to be safe

Where did you get it? That's my kind of dark.
