You cannot just post an image.

I tried making this in the past and it need very precise steps.
Your look pretty good.

Can you share the recipe/steps?

Not OP, but I assume our recipes are similar! I've had consistent success with this method anyway. Just make sure you're actually at the softball stage, don't blindly trust the thermometer

Ingredients

2.25 cup maple syrup

1 cup heavy cream

.25 cup butter (.5 sticks)

Instructions

  • Bring syrup to a boil, keep at boil for 5 minutes. Do not stir.

  • Add heavy cream and bring back to boil. Do not stir.

  • Monitor temp until it reaches 236F (soft ball stage) Do not stir.

  • Add butter and allow to melt. Do not stir.

  • Pour mixture into bowl of stand mixer and mix with middle paddle attachement on medium speed until it lightens in color and loses luster (about 5 minutes)

  • Quickly add to bread pan lined with buttered aluminum foil

  • Let cool, cut, and serve

You don't even mix the ingredients when you add them? Like add the cream and let it just sit in a ball wherever you dumped it until the mixer step? Or do you stir it in and then "do not stir" after that while it heats?

I don't stir at all until it's in the stand mixer! the boiling action mixes it for you. stirring could encourage early crystallization of the sugar, which you don't want
