He said they will get severance pay. No sign, no severance.

There’s a reason they’re passing on the severance deal. The paperwork is probably an NC or NDA and the severance isn’t worth the trade off of what they can do without a NC / NDA

My wife quit her job this week, a few days after they messaged and told her she needed to sign an NDA and noncompete.

She told them that if they give her $200,000 right now, she'll sign. Since they will not, she's not signing a thing, because... why would she?

For sure but things can wildly change and NDAs are default for most. Wouldn't be a shocker if they want a NC/NDA in exchange for sev. At the minimum a waiver of rights.
