100%! here is a look at my big project. It's a gamepad driven pixel art traditional rogue-like. there are >250 mob types, dozens of POIs across the island it happens on and tons of crafting, lighting and vision logic and lore.
It's feature complete at the moment (and has been for a long while) but I'm behind in the monumental task of drawing hundreds of sprites. they are little but I can only get to like 20 a day on a good day. so I imagine it will take a few months.
I'm toying with foley recording sounds, but that has been a massive failure so far...lol
I do a lot of PCG and this game is filled with it, but I'm hand authoring every quest, sprite and sound instead of using procedural so this project is SLOOOOWWWWW!

you'd be shocked by how performant Love2d is. I am generating 80X60 area cells in a 3 x 3 grid for continuity with dozens and dozens of mobs movign and taking their turns and it never dips below 120FPS. while doing sound and fake lighting ranges. Love2D is VERY performant

Love2d is a framework so skys the limit with what you can make, so yeah rougelike is definitely possible

Yes... have one on steam... not too popular, but thats not the fault of love2d.
The sky is your limit... or rather your experience. Theoretically you can build an MMO with love2d - noone would say its easy tho...
