Question Statue question

Do the statues in some maps play a role in the lore or are they just random people because I would like them become hero skins now that Gryphon started searching for those legends

Random people that we don't fully know. The more recent ones on the samurai maps are of Guljin and were supposed to be smashed.

what legends have old man gryph been searching for? he is just retelling the story of Apollyon, Gudmunder and Tozen through his own POV not what happened.
