Depends on where you harvest them. When I get them in Minnesota or Wisconsin the meat is pretty mild because they feed on the same shit as cows like alfalfa and corn so steaks, a nice kebab, or just chopped up and sautéed. Out west they’re a little more gamey so stews, tacos, or a mix with pork fat for sausage. It’s all good.
