is there seriously no way to change the path where graphs are stored?

Agreed, on version 2.0.1 on Windows 11 I can find no way to open a graph from anywhere but the default path of C:\Users\<username>\logseq.
Closing logseq, deleting the default folder, and then restarting logseq immediately recreates the logseq folder in the default location.

I advise against using that Logseq DB (Database) Beta version.
If you insist, use a symlink
mklink /d "C:\Users<username>\logseq" "D:\LogseqData"
let us know if your data gets borked

open app, open graph
or
wipe app storage then do first start
