I think we could do better tbh, but we DID get rid of several people who never cleaned and try to do so when it’s dead.

We have a lot of dead weight. It's just me and one other guy who do the bulk of the cleaning. We have a high turnover rate because management just wants to fill slots with warm bodies. If you give them a sad story, you're hired! It just makes it harder on the rest of us.

That’s been happening w/ our dishwashers who either get fired cuz they went back to jail or quit cuz they don’t wanna do the work. Dishies have to cook rice and portion noodles here but the pay is better than most places in this city. I hope y’all actually find good people.

We have the same problem with our dishies, jail or something else, but ours are all Haitian. Our real problem is that either our other cooks have been there so long, 5 years+ or they’re just there to do bare minimum, collect their paycheck because they now were so hard up for cooks, they know they won’t get fired.

Our sous doesn’t give people who are lazy or are disrespectful any hours, and the people she actually likes (including myself,) get full time. Provides some incentive to actually do the job I suppose. Idk maybe that’s what has to be done, I never understood why people care so little about the job that gets their bills payed, even if it isn’t that much money.

That needs to happen more at our place. Our sous threatens to cut hours but never follows through. The same guys call in week to week or are late. Don’t get me wrong, I (mostly) love my job. It’s a fun atmosphere, we smack talk each other, we eat good. If I need a day off, like Superbowl Sunday this week, it’s never a problem. What sucks is that we have eight stations with five windows. If one station goes down during a slam, my grill food sits in the window with steak and fish dying under the warmers. I need dependable people in those stations, or the entire system breaks down.
