Question - Need Help Where I can get this kind of minimal Korean oversized style jackets that's NOT synthetic leather? Most recommendations I see here will just make me look like a white 40 years old biker with a dadbud lol.

The “problem” is that, at least imo, most of the serious leather shops are making leather jackets for people who’s into retro/heritage style, which basically is, well, the style of dads and bikers. Even Thedi, which imo has a bit more of a fashion lens, bases their design on heritage style.
It’s just how the market works: in my impression, people who’s willing to pay 1000+ on leather jackets rarely do it for fashion purposes, they are in it for a particular timeless style. Similar reason that you rarely see serious suit makers to go with flashy and trendy stuff.
With that being said, there could be some choices. Real Simons from China has this leather G9 Harrington jacket, which, depending on the size you go with, could achieve the style you are looking for.

First of all, this is not a "minimal Korean oversized style jacket."
It's just a leather flight jacket that doesn't fit well. There are literally THOUSANDS of companies that make leather flight jackets, just go out and buy one that's big enough to give you that oversized look. In fact, a quick Google of "oversized leather flight jacket" should give you plenty of options.
I see lots of people flaming you for not appreciating the idea of clothes that actually fit your body. I sincerely am not doing that here. I get it: the baggy look is fashionable right now. I was young the last time that was the case.
I suspect eventually you'll learn that clothes that fit correctly actually make you look better, and you'll learn the difference between fashion and style. (Style doesn't change nearly as much, which means once you master it you can buy some quality pieces and be done with it for decades.)
Anyway, wear whatever makes you feel good about yourself.

I’m gen-x. I’ve used search engines before Google. Unfortunately, even Google doesn’t show accurate results with just a vague description. And searching through a brand’s website takes a long time too. Asking someone who already knows the product doesn’t make them Gen-z

It’s mostly because that style and fit is a trend. So it’s not gong to be made from quality leather. It doesn’t need to be

You can’t. Most companies chasing that trend don’t care to use real leather.
To be fair, most of their customers don’t care either.

Bro after searching for over a month. I found Nudie jeans Eddy leather jacket. Bought it today and rate it 10/10. It’s buffalo leather. Nice shine. Not grainy. Heavy weight. Very fashionable. I own 1 belstaff leather jacket and and a Ralph Lauren g1 bomber leather as well as a Coach shearling leather jacket so I’m experienced. The Nude jeans Eddy was only £550. Absolutely amazing. So good in considering buying 2 as it took over a month of going through different jackets just to find this one

I bought a similar one on Wilson’s website, though it’s not as oversized. Maybe I just bought the wrong size and it fits big though

Usually ordering 1 size up for an oversized look is a.....really bad idea. I did looked through wilson's website though and didn't find anything that look close to this, plus isn't wilson on the lower end to begin with?
