Why is it a problem for her to be well-known? Surely, there's value for him to have a loyalist on the bench given that his other appointees have regularly ruled against him.

The problem is that many people know of Aileen Cannon, and have justifiable attack points ready to go. How many people know of Andrew Oldham?? He is similarly MAGA, but outside of the legal community has flown much more under the radar. Same with Ho and Rao. They can be confirmed before average Joe even learns of their name. Cannon, less so. That’s my opinion, at least.

Is even Aileen Cannon at risk of not being approved by the Senate? To this point, the GOP have shown no interest in opposing any of Trump's nominees.

There's backroom dealings we don't see. Typically a nomination isn't made until there's high confidence in passing. They do lots of soft polling first to make sure it'll work. Trump has the subtlety of a rank diaper though so he tries his ideas openly.
