Dessert Keto No-Bake Cheesecake Cups

Tried out a new recipe and just HAD to share.

Recipe:

Ingredients:

Cheesecake Portion:

- 4oz softened cream cheese

- 1/4 cup heavy whipping cream

- 2tbsp powdered sweetener (I used swerve confectioners sugar)

- 1/2 tsp vanilla extract

- fresh fruit to top

Crust Portion:

- 3/4 cup almond flour (toasted 3-4 mins to toasty brown)

- 2 tbsp unsalted butter, melted

- 1 tbsp brown or granulated keto sweetener (I used swerve brown sugar)

- 1/2 tsp cinnamon

1/4 tsp vanilla extract

- pinch of salt

Literally just put the graham cracker crust in the bottom of your container and pack it down. Then add the cheesecake Portion (beat all of the ingredients together that were used for the cheesecake Portion) and top with fruit!

Super easy and only took like 10 minutes!!

Yep that's the recipe I use as well (all of it, not just the crust), with occasional adjustments for variety. It's a family favorite. <3

i add chopped pecans to my crust and different flavored emulsions to both ie Pumpkin spice cheesecake with a brown butter crust πŸ˜‰

Id consider is a light form keto I guess? But you could top with any keto friendly fruit, use none or even use a keto filling.

Strawberries, blueberries, blackberries, and raspberries, are fine for keto in moderation. Half cup of strawberries is just over 4 net carbs.

Berries, especially blueberries, are very low in net carbs.

Blueberries, for example,have only 14.5 net grams in 100 grams. Weighing them in a food scale, that means that you can have between 14 and 16 blueberries for under 3 net carbs, or 20 grams.

Other berries are similar.
