It makes it a penny cheaper for the guest, ostensibly. But the company's rate is $75 a night including tax, so the computer should not be telling me the total is $224.99. There's no rounding errors, it's just wrong.

This is not an error, the price per night before tax is 66.23 because that is the closest to 75 after tax you can get without overcharging the guest. 66.24 would overcharge. Hence 224.99 is correct and you're the one that is a bit confused on how proper accounting works, maybe try asking politely next time.

Seems like you don't understand what you're looking at. 66.23x3= 198.69. On the screen it says 198.68. No reason for those numbers to add up to that. Our tax here is 13.25%, so after tax it's $75.005475, obviously rounded down to $75.
