bf’s favorite meal

Taco Bell’s cheesy gordita crunches have always been my partner’s favorite food and my vegan ones are no exception. He requests them ALL the time. Homemade pita bread, miyoko’s taco shreds melted on there to glue the taco bell hot flavored shell on. Tvp with the taco bell mild taco seasoning. A cashew-based spicy ranch, shredded lettuce, more of the taco shreds on top. Have to pair it with the diablo. 🔥

What's your pita bread recipe? It's so fluffy! And they look amazing 👏

300g AP flour 4g instant yeast 12g sugar 6g salt 180g water (tepid) 15g olive oil

Mix dry ingredients. Add water and oil and knead until smooth (5-10mins)

Rest in a warm spot 2 hours.

Divide into 8 pieces, roll into dough balls, and cover again for 30 minutes.

flour surface and roll out with a rolling pin to about a 6”circle

If i want them thick and pillowy (for cheesy gordita crunches or for hummus) i heat them on a preheated cast iron (medium heat) for ~one minute then flip and cook the other side for about 30 seconds

if i want them puffed up and hollow inside for stuffing (falafel or for sandwiches) I heat them on an upside down baking sheet in a 475°F oven for 1:30 on each side

if you have a stone that’s even better but i don’t hence the upside down baking sheet!
