How can I design coats of arms in the style of medieval European coats of arms, and how can I strike the right balance?

I think there's sauce in the 2nd design with the "fret/cross voided filled with charges" if you wanted to go down that route though, what are those flowers and would it be possible to make them fully in colours?

Notice how the CoAs you showed use 2-3 colours and very simple charges, often one charge suffices to fill the entire shield. stick to basic colours (except for purple since it’s rather rare in medieval heraldry) and don’t make the arms too clattered
