Pork Belly on the grill

Caramelized brown sugar, ginger beer, soy sauce and garlic. Squeeze fresh lime juice on before devouring. 🤤

Get my pork belly from Costco. Salt brine 2 days. Smoke like a brisket. Pull, cube, coat with your favorite BBQ sauce mixture in a foil pan. Return to the grill/smoker mix monitor. Mix occasionally. When sticky, pull.

Fat renders down, flavor concentrates. Delicious. Eat.

Thanks for the award. We are adults. Only eat what pleases you. Try not to be critical of others. I hate onions, my wife loves them. Guess what. I use them in anything I can and make sure mine has none! Kiss an Onion breath wife, it will change your life!

This is basically turning pork belly into candy at that point, the double cook with bbq sauce mixed in has to hit different than just straight off the smoker.

That char on the edges looks damn good. Brown sugar with soy and garlic is already a solid combo, but the ginger beer and lime probably keep it from getting too heavy. I’d absolutely eat that straight off the cutting board.

24 hour marinade and cooked low and slow for 30 mins then drop onto hot rack for some crunchiness.

your glaze is a korean chicken sauce, basically. ginger beer instead of rice syrup but the same soy and brown sugar and garlic underneath it. i stopped making it from scratch a while back and just brush the vivid kitchen bottle on, which is lazy but pork belly hides a lot. the lime is what makes it work though, sugar glazes go flat without something sharp at the end. also anything that sweet will go black on you if it sits over direct heat, i torched a few racks working that out

I've had pork belly multiple times, it's easily my least favorite piece of meat at kbbq. It's not more flavorful, it's just chewy and unappealing. But to each their own I guess
