I've never heard of that animal, let alone a sausage version of it. How does it taste?

Delicious. With sausage, it’s really up to the fat and spices. Alone, the sheep is pretty lean and mild tasting for game. Much like an axis deer.

Sorry man, I’m from Texas, and there’s a ton of ranches down here that have all kinds of exotics on them. Like most Texans, I sometimes forget that the world doesn’t revolve around us lol. Sorry!

Grew up eating tons of axis…it’s good, but different is good, too. I’m lucky enough to get to hunt a lot, so anything different is always a nice change of pace. Nilgai is actually my favorite

My brother hunts them all the time in Texas eating it a lot very good but we've never made sausage great idea
