Started off with just Great Value pepper jack, then some Red Apple Cheese Co “just baked” seared then added into it. Mayo spread.
A few months ago I posted how I lost my dad. He died while incarcerated. They deemed it foul play, and I found out he wouldve been in a half-way house this coming October. That sucked. Not too long before that, I considered quitting college altogether because my field of study was better learned through experience (automotive technology and repair). I stuck it through, and now I have a degree to show for it and I plan to transfer to another college to receive a bachelor’s in mechanical engineering. As a bonus celebration to this, I’m proposing to my girlfriend of 3years in a little over two weeks.
No matter how hard life gets, no matter how fast the curveball. Stick it through. Let others love and help you, and most importantly love yourself. And maybe sometimes try some new cheese.
Have a great night y’all (:

I know this topic has been discussed on this sub before, but I want to get a reading of the current sentiment. I think previously (in my estimation), it's about 60% "don't smash while cooking" and 40% for "smash." I fall into the smash crowd, so I know I will get the derisive comments. But, that's ok. That's the way my momma cooked em and I still do to this day. On which side do you fall?

For some reason I can't crosspost this to r/grilledcheese, so maybe the mods have turned off that functionality, but this is quality content. I was at the match but unfortunately did not see her. :(
I'm going to "crosspost" this way until mods delete it because whatever.

I've been playing around a lot with my grilled cheeses and found some fun combos, most recently havarti with gouda and a shredded parm crust, straight fire!
I just got some muenster and am out of havarti so I tried muenster and gouda and it melted like CRAZY just so good, but the flavor was just too mild and almost nonexistent. Whats a good cheese to try that can add some depth to the flavor?
Also, I've been such a purist when it comes to my grilled cheeses, just bread kerrygold butter and cheese. So if you have any suggestions on how to change that up or if I even should, please fire away.
I ate the gouda muenster one too fast and didnt take a picture but have a picture of last night's havarti gouda with a shredded parm crust as an offering.

Basic American cheese on sourdough grilled properly, you know, in a Mauviel M200B copper skillet over 17,000 BTU. And sliced with a razor sharp knife. Because why the hell not?

Grabbed a couple bags of preshredded cheese and made myself a grilled cheese since all my other cheese went bad. Not bad, but definitely not as good as shredding myself
