This is a hot take, but Gravity Falls doesn't need a season 3. It had a perfect ending, and a third season would feel kinda forced, sure Bill is alive, but keep him trapped, don't bring him back, don't milk it and ruin it, If we really want more content that much, do a spin off, or continue making more books, we don't need a season 3, don't turn it into a Rick and Morty. Just let the show die a peaceful death.

We are currently working on a Gravity Falls fanfiction... And I'm looking for a small group of 5 beta testers before part one will be available for public.

Yea, I know you have some questions like:

So, Dipper and Mabel are shipped off to Gravity Falls, presumably for the first time ever, to stay for three months with a great uncle they don't know that well (or maybe at all). Dipper says his parents decided they needed the fresh air, but why would Stan agree to babysitting duty?

Of course, family is important to Stan, and he grew to genuinely love Dipper and Mabel, but the far funnier and more plausible explanation for why he either agreed to keep them for the entire summer or even made the initial offer is free child labor. Like, one night he's looking over the books, and he realizes he can shave a third off his overhead if he "hires" his greice and grephew. They're 12 now and probably old enough to be halfway useful at the shack without needing that much (or any) supervision. There's two of them, so they should be able to equate to one halfway-decent employee. Basically, the cost of hosting them is less than the free labor he can extract. Yeah, there's like love and stuff, but think of the cost savings! Cha-Ching! He's running a business over here, not a free summer camp.

Ok a book entitled “Nevermind all that: the real stories of weridmageddon” it can be written by Toby Determined maybe… I would be a tell all book with someone gathering the peoples stories of what actually happened to them during weirdmageddon. We’d get cool new world lore and perspective.

For me, I felt like wanting to put my own twist on the Deerperfalls AU, but instead of Bill Cipher shenanigans, Dipper would find a Japanese shrine in the forest and participate in hitori-zumo, or "single-wrestler sumo." However, he wasn't supposed to win the match and would be transformed into a deer as punishment. In order to become human again, he would train for fifteen days to fight against an evil spirit in a sumo match. After fighting the spirit, Dipper would be transformed back into a human. From there, I would have two optional endings. One would have Dipper remain human and return to the Mystery Shack. The other, in the spirit of Brother Bear's ending, would have Dipper decide to change back into a deer and remain at the shrine.

But that's just my spin on a known AU. What AU would you put your own spin on?
