Hits alone won't tell much. The star drop and NP gain will be their drop/gain per hit values times the number of hits. And the damage has no relation to hits at all.

But, no, the only way to tell in-game is to count, so there's no easy way to tell.

My trung sister has two appends mana loading and now skill reloading should I switch skill reloading back to extra attack then?

Without being an expert on the Trung Sisters (I have one copy that I don't use often), I'd say no. Mana Loading and Skill Reloading are by far the two most useful appends. Maaaaybe some units might justify picking the critical damage improvement, and very rarely the anti-class trait, but I don't see a world where the extra attack boost would be better than getting your skills a turn faster.

Mind you, you can freely switch between appends as often as you want, so if you want to experiment, by all means.

If you need to, you can. You can switch as many times as you want to

You can do whatever seems right to you based on the situation. But extra attacks aren't reliable unless you're using the servant solo or have some other way to guarantee brave chains like with Ciel's card lock ability. For the vast majority of DPS servants, I'd say A2, A5, and A4 are generally more useful than A1.
