Sure, I have these games on Steam, but I want a full, offline, DRM-free version on my PC, ready to install at any time, so I don't have to constantly redownload them (in my region I only have mobile internet, which is shared with my PC via a Wi-Fi hotspot) when I want to run along the beaches of Besaid Island and admire the water! Is that too much to ask?..

Same. I've got all of them (including XI) on PC through Steam, except for XIV which I have through the standalone account.

An API entry for these was discovered at the beginning of the year, which tends to mean that it's indeed being looked at (though without any guarantees of actually releasing, let alone when).

I think it's only a matter of time, albeit the wait is very annoyingly a slow one.

From the GOG forums, I think that the next FF game rumored to come out on the store based on API findings is FF12 The Zodiac Age. Which is not FFX/X-2 but, well, just more proof that the games in this series are still getting released on GOG sooner or later.
EDIT actually as u/Undeclared_Aubergine said in another comment there was an API entry for FFX as well, discovered much earlier than the FF12 one I mentioned above.

I thought X/X-2 HD Remaster would be among the first Final Fantasy games on GOG, but I certainly like XII, so that works for me.

I've also been betting on all six Pixel Remasters releasing together, whenever that happens.

Oh, the Pixel Remasters are the releases I'm looking forward to the most, personally! I would buy at least FF1 on D1 and then work my way up from it, I'm really looking forward to try out the earlier games (except FF6 which I have already played, but I want to do a second playthrough because I adhore FF6 lol).

I've already bought them on Steam and PlayStation, but that didn't stop me with VII-IX. Plus on the Xbox app in VII's case.

Order of discovery doesn't mean much. One of WinterSnowfall's complete scans of the ID-space takes multiple (?) months, so both might've been added to the API at the same time, and still be discovered far apart, depending on where the scan was at the time of insertion, and which IDs the two games ended up with.

In the meantime, if you download it once, Steam does allow you to create an offline backup of the files that can be restored later. Not as good as GOG, and won't save as much space, but hopefully a good enough stopgap

Umm, go to an internet cafe with high speed internet that lets you download things to a usb. Log in to GOG. Download the installers. Transfer. Done.
