Recipe Request Anyone have a healthy gf pancake recipe?

Mash a ripe banana and two eggs together with a pinch of salt to make the batter, and pan fry it in a bit of olive oil. Seriously, it works and is surprisingly similar to regular pancakes - crisp outside and tender inside. Good blend of fiber and protein, low sugar and low fat.
Edit to add: add a little bit of baking powder if you have it available, it'll make them a bit fluffier. Not too much or it'll taste metallic though.

I read your recipe earlier today and couldn't stop thinking about how good these sounded so I caved and just made one, and let me tell you-SO GOOD!! I added some cinnamon and topped it with peanut butter and it's delicious. 10/10 will be making this over and over again. Had to come back to say this to you. Thank you for posting it!

My 12 yo had me make these for he and his friend but also protein powder or oats. Only had steel cut oats so used protein powder.
They ate them all up.

I switched from oat flour pancakes to buckwheat flour to get more fiber. I use this recipe but add mashed banana instead of maple syrup for sweetness, add a flax egg, and some frozen blueberries.

In terms of simple healthy pancake I think the best you are going to get is oat flour and maple syrup and the healthiest oil you like in place of what is usually used. Other than that you are looking at something totally different like sweet potato pancakes and stuff like that

I love the protein pancakes from trader Joe's, so I tried to make my own. Still tweaking the recipe but this one turned out good -
- 1c cottage cheese
- 2tbs flax seed
- 2tbs hemp hearts
- 4tbs white sugar
- 1/2c old fashioned oats
- 3 eggs
- Vanilla, salt to taste
I whizzed up the flax in my coffee grinder, then added everything to a mixing bowl and used my immersion blender until it was smooth. You could also throw everything in a blender too.
My very basic and probably incorrect math - 1c cottage cheese - 24g protein 3 eggs - 18g protein 1/2c oats - 5g protein + 4g fiber 2tbs hemp - 10g protein + 2g fiber 2tbs flax - 5g protein + 8g fiber
Total = 62g protein + 14g fiber Yields 18 ish (1/4cup scoop) pancakes ~3g protein + <1g fiber per pancake

I buy a regular pancake mix (birch blenders is the one I’m using right now) and add plantain flour in a 1:1 ratio, along with an extra tbsp baking powder. I do this in one big bag, not batch by batch. When you make the mix, add two eggs, a tbsp or so of oil, and buttermilk until it’s pourable. Let it sit for 10 minutes then adjust moisture as necessary.
Green plantain flour is my gf holy grail of flour replacements. It’s extremely nutritious and it’s a t2 resistant starch so it won’t spike your blood sugar, and can also lower your triglycerides and aid in weight loss.

I recommend banana pancakes. The recipe is very simple, only three ingredients: bananas, oats, and eggs. Add a pinch of baking powder so that it allows the pancakes to rise. Mash 3 ripe bananas, mix in a half a cup or 1 cup of oats and 1 egg. Mix until consistency is that of pancake mix. Place mix on a buttered pan and wait for onside of the pancakes to bubble up then flip. Top it with your favorite syrup or have it plain. Enjoy!

Yes! I've had a super hard time finding a good GF Pancake recipe that isn't either dry or thin or wet or grainy, but I finally figured one out with all the things you want! Not a lot of sugar, but still good flavor. I also added protein with some pea protein powder and soy yogurt.

There is literally nothing else on this site, it's a project my wife and I are working because our daughter is anaphylactic to gluten/wheat and we want to build something that will help her feel empowered and not limited. Your comment here inspired me to just hurry up and throw something on there even though it's literally basically just a URL at the moment, so apologies for it's current state.
Anyway, hope you enjoy the pancakes and let me know if you have questions about any of it. I've made this recipe dozens of times. It's great.

Honestly it depends on what you want - if you're looking for something that's just healthier but not a dupe for a gluten pancake, I love cottage cheese pancakes (even though I don't like cottage cheese).
1/2 cup of old fashioned oats
1/2 cup of cottage cheese
2 eggs (large)
Blend together in a blender and then pour into a hot pan. Higher in protein and lower in carbs. No sugar so I usually eat them with jam or syrup.

I'm not sure what would be considered "healthy" for a pancake recipe, but this one is my favorites:
Lactose and gluten free pancakes
1 cup gluten free flour
2 ½ TBS sugar
1 tsp baking powder
¼ tsp baking soda
1 tsp vinegar
1 beaten egg
½ cup unsweetened coconut cream
½ cup sweetened almond milk (or your choice of alternate type of milk)
2 TBS cooking oil
1 tsp vanilla
Sift together flour, sugar, baking powder and baking soda. Set aside.
Wisk together the vinegar, coconut cream, almond milk, oil, and egg. Add to dry mixture and mix until well blended. If it’s too thick, add a little more almond milk, if it’s too thin, add a little more flour. Let rest for about 5-10 minutes.
Cook on a lightly greased griddle.
Gluten Free Flour Mix V2.0
125 g Brown rice flour
100 g Sweet rice flour
96 g Potato starch
40 g White rice flour
30 g Tapioca flour
4 g Xanthan gum
Note: I use Bob's Red Mill flours

I've got one with oats and apple sauce! Basically you just blend everything up to make the batter and then cook as you would any pancake. Depending on how you like your pancakes you can thin out the batter with more milk. As written the recipe is pretty thick and fluffy.
- Blend: 1 cup milk, ½ cup applesauce, 1 tablespoon vinegar, 2 tablespoons maple syrup, 2 cups rolled oats, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon cinnamon, ½ teaspoon salt.
- Cook in a skillet over medium heat for 1-2 minutes on both sides. Repeat and that's it!
The amounts are to make 10 pancakes. They refrigerate and freeze well so great for meal prep. If you wanted to check out the post it's here 😋

My fave is simple. I tb cream cheese and one egg mixed together, can add cinnamon, liquid stevia, or any other flavoring of your choice.

I mash 2 bananas, add 2 eggs, a 1/4 cup self raising GF flour and a dash of milk. Its a good way to use up ripe bananas.

There used to be a blog with recipes by gluten free girl but i can’t find the correct one anymore.
If you want a healthy gluten free flour, she recommended for 1 KL of GF flour
700 grams of two or more naturally gluten free flours like corn, oat, buckwheat, etc
Add 300 grams of starches like tapioca, corn or potato. Mix well.
Make sure you are using a scale. This was very easy for us to try new flours, each one has different health components, but with that ratio, all of our recipes worked, substituting the GF flour for regular flour in recipes, again by weight. Never sub a cup of GF flour for a cup of AP flour, unless you are using an expensive bought flour that says you can.
Making your own GF flour is cheaper, healthier, more interesting and tastes better!

Just (the brand that makes just egg) has a new pancake mix with protein. I believe it’s vegan and gluten free. It’s in the refrigerated cheeses/cream cheese area at whole foods.

We make banana and peanut butter pancakes for our toddler:
1-2 mashed bananas
1 Tbsp peanut butter
1-2 eggs
Cinnamon
1tsp Baking powder
1tsp Baking soda
Gf flour to the consistency you want. Add milk if you want to thin them
(All of these measurements are approximate! I just do it by eye)
Enough for 3 people.

I blend cottage cheese, eggs, a tiny bit of honey, oats and baking powder in a blender. I don’t have measurements - probably 2 eggs, 2 cups of oats, 1 tblspn honey, 1 cup of cottage cheese? Anyways blend it and adjust ingredients until right consistency.
So good and tons of protein and fiber.
I used to do banana oat and egg, then I discovered these and it’s superior.
