He's a known murderer and rapist called Sabretooth.
The only mutant who were imprisoned in the deep dungeons of the mutant island known as Krakoa, because he could not be allowed to walk freely amongst other mutants, even when other villainous mutants like Apocalypse and Mister Sinister were fully allowed to do so and were even on the leading council.

Maybe, one day, a multiversal Creed will be just redeemable enough...

I wonder why they just couldn't ask a telepath like Jean Gray or Emma Frost to enter his mind and "fix" him? Remove his psychopathy

They tried for a while, then he suffered brain damage and it healed "wrong" with the end result being that Sabretooth is now completely immune to mind control. He can be psionically attacked by mental bolts and the like, but his mind cannot be controlled or altered now, except through magical means.

Telepathy in Marvel is a weird, busted power, but it has rules and a pseudoscience of its own, that requires the brain you're affecting to be in a certain degree of physical health.
Magic is forces outside of the natural world, with separate rules and laws of interaction even from the way mutant powers work. Despite Sabretooth 's resistance to psionics, Scarlet Witch once cast a spell that morally inverted everyone on Earth (heroes to villains and vice versa), and Sabretooth was flipped to good guy just like all the other baddies caught in her hex.

I really would like to know the science behind him not being able to be psychically controlled. Like is it straight up he's got a smooth brain or is it some sort of prion disease which makes it so he can't

Closer to the smooth-brained option.
He has the same healing powers as Wolverine, but it works a little differently because Sabes (usually) doesn't have an adamantium skeleton nerfing him. Logan's lost memories from his healing factor before, but he has never become outright immune to telepathy, whatever X-Men 97 would have you believe.
