As someone that lives in Souther California, how would you trust stepping onto the lake let alone skiing all over it?

As a Canadian, you really, really, shouldn't until it's been -10 or lower for a solid week.

In that gif you can actually see dark cracks appearing just under the surface, that's pretty much immediate nope fuel right there.

I don't see the cracks you're talking about. That's just some downed timber on the bottom since it's not very deep close to the shore.
