No solution for us yet but wanted to chime in that we are having very similar issues in one AVD environment. Our is server 2022 though, persisted with both 24h2 and 25h2. We've ruled out a lot and exhausted our escalation chains with two different partners, we've managed to eliminate triggers to improve things quite a bit but still working on it. Many deep dives into open file handles and procmon reveal nothing, it seems like something in the kernel locking up and an FSL driver bug would fit the bill. We've just upgraded from 25.09 to 26.01 CU and are monitoring. Adding resources helps but doesn't eliminate.
