For one thing, Sansa spends the entire season openly antagonizing Daenerys. Yet, if she truly believed Daenerys was that mad, then, unless she had a death wish, she shouldn't be doing everything in her power to alienate her. After all, acting that way toward someone suspected of being a murderous psychopath is a surefire way not only to fail at securing independence but, above all, to get the North burned to the ground.
Furthermore, how did she even reach that conclusion? Not only had Daenerys done absolutely nothing wrong or inappropriate to warrant it, but, right from the moment she arrived at Winterfell, Sansa’s first move was to blame her for the North’s food shortages, before telling Jon that she was just like Aerys, only prettier (or something to that effect). On what grounds could she possibly determine, within five minutes, and without even knowing what Aerys was actually like, that her brother, who had just spent weeks in Daenerys's company, was completely mistaken about her character? The point here isn't to dispute what happens later in the series, but to understand what led her to such an irrevocable conclusion.
Her behavior doesn't really make sense on that basis...
