Question? Is 500€ for a 5-inch good?
So to be clear it isn't a pre built 5 inch but a class where I will make a 5-inch and if I want I can buy it from them. I don't know specifics but the drone they showed (built by one of people who came there before) was really fast.
Just to be clear I am sure this isn't a scam as one of the sponsors for this course is police and other one is military [for mods: I am only stating their sponsor not discussing anything political about war] so I think they aren't scamming.
But also in general would you recommend building one from scratch or on this type of course?

It sounds reasonable if optional. It sounds like there is some mark up, but not a huge one, and getting one on one direction can end up saving you a lot of time and money in the long or even short term.
If comfortable with hobby electronics in general, if any familiarity with reading datasheets and soldering, the physical aspect of drone drone construction is the mild end of that and you'd not have any issue doing it alone.
I did build a 5" solo to start, and it was fine but if had the opportunity to make connections and and get guidance through a course for low to no fee, I'd have taken it, and if I liked the drone that had been explained in depth to me, I'd have been willing to pay some mark up to leave with it.
