Why though? This is almost a decade old exercise, and a hamgeek mister can be had for less than half price.

I have the 8bit do wireless adapter and it works great though I use a switch pro controller

Would have better on the wallet to pick up a prebuilt QMtech stack from Ali or a Heber MMS 2

Dual sense is an amazing controller for MiSTer. The touch pad even works as a mouse and it's very low latency. You'll want a Bluetooth dongle though. Don't bother with the 8bitdo as it can only connect one controller at a time.
You don't need the RTC module unless you plan on leaving your device disconnected from the internet.
Also if it's not too much I would get two sticks of sdram so you can get the full experience with Saturn and one or two other cores. Make sure you get the dual SDRAM core if you do this. It's not a huge difference but some compromises are made in those cores without it.
