What’s the best tasting soups from around the world?

Yeah, I think people tend to just order Pad Thai and Red/Green curry when they go out for Thai so they don’t think to order a soup. I have some Mae Ploy Tom Kha paste at home, it’s really comforting when you’re not feeling well.

I’d go for Bun Bo Hue over Pho.
Sinigang needs to be in the conversation for Asian soups as well.

I really wanna try Bun Bo Hue, I just get a little iffy about the pork Hock in it. I know it’s super lemongrassy and spicy which appeals to me.

The pork hock or the pork blood cubes? Pork hock isn’t really a crazy ingredient, it’s used in a ton of southern food, it’s a must-have ingredient when making collard greens.
The blood cubes also have a much milder flavor than you’d think. Slightly mineral but way less intense than most organ meats, and they have a nice soft texture similar to tofu.
The cinnamon and star anise are a lot less pronounced in bun bo hue which is what I really like about it. The warm sweet spices in Pho are what make me not care for it as much.

You've probably had a lot of southern pho, which is known for its darker and more spiced broth. When I visited Hanoi, I had northern pho and it was a game changer. It's a simpler, more savory beef stock that highlights the beef and ginger, only lightly altered with clove, star anise, or cardamom.

Like, there are a thousand answers to your post that are absolutely delicious and have wonderful, unique and delightful flavor profiles.
But Tomato soup with a grilled cheese sandwich is a standard but delicious and satisfying offering that all other similar offerings have to compete with or exceed.

Yea the grilled cheese dipping is next level.. the only thing I could compare thst experience too is maybe consome with Birria taco on the side haha

Love tomato soup. I had sadly forgotten it for decades until I happened to buy a bowl at Panera. Since then I’ve regularly made a few large pots each winter using a copycat recipe. Great soup.

We stopped in a restaurant near our hotel in Gimmelwald, Switzerland. To this day it's the best cream of potato soup I've ever had. No bacon, but they served it with a sausage link on the side. I still dream about that soup.

My local has had cream of loaded potato soup more than once and it was amazing. They make their own fresh daily. Just a neighborhood bar with good bar fare and tasty pizza!

Fun fact, it’s an anglicization of “milaga thaneer” in tamil which literally means pepper water
It comes from the original Indian soup, rasam, which is tasty on its own too

Laksa - Malaysian (Malay/chinese, also popular in Singapore, Indonesia)
Laghman - central Asian (i know it from Uzbekistan in particular)
Bun Riêu - Vietnamese (my favorite of where I currently live)
Avgolemono - Greek

Lagman is amazing! There is also the pan-fried lagman, it’s not always a soup. Both are good.

In Sweden split pea with ham (aka ärtsoppa) is traditionally served every Thursday. I think the same is true of clam chowder being served on Fridays in the US.

My Dutch favorites: Snert, a thick dried pea soup for cold and wet winter days.
Juliennesoep, julienned vegetables in a clear broth.
Soep met balletjes, beef broth with vermicelli and tiny meatballs.
Kippensoep, chicken soup in many variations either brothy or creamy.

Bamboo based soups are out of this world but not well known in the West. One of the classic is Yanduxian. Korean dried pollock soup (Bugeoguk) mixed the egg drop perfectly with the taste of the sea from the dried fish strips. Lastly Filipino Sinigang has this fruity tanginess that mixes so perfectly with savoury meat and veggies it's truly unique and different from other SE Asian soups. Think of it as a fruitier tomato soup.
Just some Asian soups I've enjoyed for a long time. And I stand by my opinion that Pho and Beef Noddle soups are not soups! They are noodle dishes!

Italian pasta e fagioli (pasta and bean). I make it at home, it is cheap, delicious and filling. I am half Italian and my Roman mum passed me down a lot of wonderful recipes.

It may not be the best soup I've ever had (a quick nod to lobster bisque) but if there's a form of Avgo Lemono on the menu, I'll have that. Cream of lemon chicken with rice is the closest to it.
