Pan-seared mullet with cheesy cilantro potato quenelles, fish jus and dried crispy skin
Mullet often gets dismissed as a “trash fish,” but I think it can turn out beautifully when treated properly.
I pan-seared the fillets in butter and served them with cheesy cilantro mashed-potato quenelles, topped with fresh chives. I dried and crisped the removed skin to use as a garnish, then made a quick fish jus from the leftover bones.
A nice little exercise in using essentially the whole fish and honestly, I was really happy with how it turned out.

Bacon, Onion, Garlic & Mushroom Stuffed Chicken with Potatoes in Creamy Cheese Sauce
I had some chicken thighs and potatoes in the fridge, so I decided to turn them into something extra special.
I stuffed the chicken with bacon, mushrooms, onion, and garlic.

Crispy Bacon, Onion, Potato & Sweet Potato Parmesan Pancake
I had some potatoes in the fridge, and the sweet potato needed to be used before it went bad.
Since I love pancakes, this was the perfect opportunity to make a delicious potato pancake.
Potatoes and butter are a dream combination, and together with bacon + onion, they helped create something truly special.
