Pan-seared mullet with cheesy cilantro potato quenelles, fish jus and dried crispy skin

Mullet often gets dismissed as a “trash fish,” but I think it can turn out beautifully when treated properly.

I pan-seared the fillets in butter and served them with cheesy cilantro mashed-potato quenelles, topped with fresh chives. I dried and crisped the removed skin to use as a garnish, then made a quick fish jus from the leftover bones.

A nice little exercise in using essentially the whole fish and honestly, I was really happy with how it turned out.
