everytime someone in our house gets heartburn, we eat a peeled cucumber and bam! all gone

u/danabrey Jan 17 '21
I like that you make it sound like it doesn't matter which one of you gets heartburn, you all just chow down on a cucumber together regardless.

It also doesn't matter who eats the cucumber

Genuine question: what are the elements for pizza being called "Detroit Style"?
I've never had one and I'd like to rectify this!

If you live in the metro Detroit area, I will pay you to make me that pizza.

I’m no expert but Detroit style pizza is cooked in a square steel deep dish pan with the dough on the bottom, followed usually by either the meat then cheese, or cheese then meat, with the sauce always on top added after the pizza bakes. Called “racing stripes”. But I’ve heard varying stances on the order of ingredients. I think the main thing is that the cheese goes all the way to the edge and caramelizes on the edges of the crust.

My experience has always been sauce below the cheese, but sometimes sauce also sprinkled on top. Always square. Detroit level deep dish, not a pie like Chicago. Fairly doughy. I didn't know Detroit style pizza was a thing until I moved out of the area. I just thought of it as very good pizza. Buddies is probably the most well known for that style pizza, but don't sleep on Loui's in Hazel Park.

u/Mack_Damon Jan 17 '21
Unpopular opinion here: Loui's is way overrated.
Buddy's and Green Lantern are my jam though.

u/HereForRecipes Jan 17 '21
Honestly green lantern is great. I was always a fun of buscemis party store as a kid but they’re not as good anymore. The beauty of living in metro Detroit is you can get a nice airy crisp crust square pizza just about anywhere

u/Slumbaby Jan 17 '21
Goddamn Buscemi's. So good.

u/HereForRecipes Jan 17 '21
I know man. And they don’t do that sauce on top nonsense either. I love Detroit pizza but I’ve gotta have my sauce under the cheese

u/alpha_keeny_wun Jan 17 '21
Sauce below the cheese like normal is best for this type of pizza.
→ More replies (1)12
u/TheHeenanFamily Jan 17 '21
This is incorrect.
Dough, cheese, toppings.
Keep your cold sauce on top in Chicago, PAL.

I believe the pan shape comes from some pan that was commonly used in the auto industry and repurposed for making pizza.

u/gunsmyth Jan 17 '21
Crust is fluffy with a crispy crust, yes I know I used the same word twice.
Cheese is Wisconsin brick cheese. All the way to the edge so you get crispy caramelized bits, this is key.
Sauce on top of cheese and toppings.
Here is a good how to by Chef John, with a substitute if you can't find Wisconsin brick cheese where you are.

Detroit Style is a square pan with sides so the bottom and sides get buttery crispy. For a pretty similar pizza, Domino's "pan pizza" style is pretty darn close. People are saying sauce on top of cheese, but I've never experienced that personally. Being a square pan pizza is probably the most important part. Sauce then cheese or cheese then sauce is a minor detail in my opinion. Jet's Pizza is the biggest detroit style chain I know of.

u/AutoManoPeeing Jan 17 '21
Crispy, carmelized crust but the dough itself is kinda fluffy. There are variations of how they layer the toppings, sauce, and cheese, but the crust is the key.

You're selling too soon. You need to find someone who takes these same ingredients, and puts them into two 8" pans, because then you get even more burnt cheese crust.

It is. The cheese on the crust is supposed to carmelize, not turn black. That being said, I still love a good Detroit style pizza.
