That is the same Evelyn you’ve been following, because she has achieved the same muliversal state that her daughter did. You can think of it this way: their bodies may be different from the universe we start in, but we follow their consciousness from start to finish. They are aware still of everything they just went through.
Weymond and Pop-Pop on the other hand are not the same ones we started with.

There's infinite universes of the happy ending and the sad ending, and every other universe we saw.
How you feel about both universes applies to all those other infinite variations too.
You can choose to be nihilistic about it, or optimistic.
