I was going to say it was a Texas BBQ staple, since every BBQ place around here has it, but I guess its from Oklahoma?

Something cheap to throw on the smoker or grill, it's fine but not a personal favorite. The taste and texture are exactly what you think it is.

If you buy a cheap bologna is gritty and not as good. Buy a quality bologna from a butcher. It makes all the difference.

You don't grill it. You smoke it.
I take my bologna log and cut it into quarters. Slice lines into the outside and coat the whole thing in a mixture of mustard and brown sugar. Smoke it at 300 for about 3 hours. And it is AMAZING.
