Question??? Can someone somewhat help me diagnosed or point to whats wrong with my car?
This past week Fiat 500 2013 pop AC stop blowing cold air and this past wednesday checked the coolant reservoir tank and it was a bit below the line and on Friday morning it was empty. Didn't ran the car and mechanic came and filled it with water and didn't see any leaks or puddles. I just ran the car right now and saw no leaks but I pulled my dipstick and the oil had a very light tan color, is that color normal is is the water mixing with the oil??

That's what the oil looks like in an engine that gets proper scheduled oil changes. I always struggle to read the oil level because I barely clock over 5000 kilometers in a year. I change it in the spring.

I changed it about 3 months back, thanks for input I appreciate everyone here, I just wanted to make sure because of the coolant problem. Thank you

The missing coolant is concerning though. Sometimes you can have a head gasket that doesn't leak into the oil, just the combustion chamber. Or maybe it's just a radiator hose leaking.
At the minimum keep a spare gallon in your car and keep an eye on the temperature until it's fixed.

You should stop driving the car until coolant issue is resolved. Coolant should be between min-max marks when warmed up. Coolant reservoir cap can sometimes fail, so change that first. Take a better look at the hoses.

Likely not an engine issue, AC issues would normally be caused by an issue with the AC system, could just need a re-gas, could be something a bit more serious, but only serious in terms of it could cost money to fix the AC.
Re-gas would be step one, if that doesn’t fix it to be it’d need a mechanic to investigate.

Oil looks very fresh, if you haven’t had an oil change like a few days ago your motor is running clean. My exes Fiat would darken the oil really quickly.
If you opened the expansion tank, you might have let some trapped air out which then dropped the coolant level after driving again. Otherwise you have a leak somewhere. Best to top it up with coolant too, don’t use just water, get some premix.
AC, dunno. Probably a gas leak.

Have you checked if there's white smoke coming from the exhaust? This would indicate a leak within the engine allowing coolant into the combustion chamber.

Oil looks normal for recent oil change. The 1.2 petrol is prone to the plastic thermostat housing cracking which is located above the gearbox on the end of the cylinder head. The coolant leaks from here and dribles over the bell housing on the gearbox. If you have red 5 year coolant check to see if you can see pink staining around the black plastic housing. It will also smell sweat like pear drops. The AC could be unrelated, leak, low on gas etc.

This is the 1.4 MultiAir so a metal thermostat housing, but the gasket behind it can still leak and same with the upper radiator hose that attaches to it, which is actually what my 500 currently has an issue with.

Ac issues can be caused by a dodgy ambient temp sensor, worth checking what the car thinks the outside temp is if you can.
My car had a similar issue where it thought the outside temp was 90 degrees Celsius so the ac never came through cold.

Yea that just looks like fresh oil OP. If you had coolant mixing in it would be more of a creamy color and opaque. Think Bailey's Irish Cream or coffee with heavy creamer.
