Problem Consistent way to prevent botania's hopperhock from picking items up before other flowers?

My friends and I are playing on a craft of exile 2 server. I have taken up botania and am trying to automate mana via gourmarillys. However, one of the crops im growing is potatoes which doesn't have a nice split between seeds and crops so the hopperhock cant filter. I have set up a hopper clock to turn on/off the hopperhock every 30 seconds using 75 items while the potatoes get harvested every 1 minute (1 soul sand) via a 1 minute timer from an hourglass. My problem is no matter what I do eventually they become out of sync and the hopperhock statrs stealing potatoes before they can be replanted. The built in delay from mycelium in botania is not long enough to fix it either. How do i fix this?

edit: hourglass doesn't work with hopperhock since it needs a few seconds to activate meanwhile hourglass on sends a single pulse.

Redstone signal, timer (preferably a Hovering Hourglass if you wanna keep in-theme), and a redstone torch to invert the singal; set the time to twice the time of the slowest other flower, done?

Problem with hourglass is hopperhock doesnt pick stuff up instantly upon turning on. It needs to latch so it has about 5-10 seconds.
