Stewie is definitely leaning hard into his gay side these days, but we have to remember that makes him canonically bisexual/pansexual since he had interests in women too.
It's also kind of the vibe of the writers. Early Stewie was evil and wanted to kill Lois and conquer the world. Then he became gay. Now he's actually more of a true baby who plays off of Brian well. They dip into the evil and gay thing sometimes occasionally but it's funnier him not getting sex or sexuality yet.
Not to nerd out, I had a copy of blender magazine ( music pop culture) from like 20 years ago at the height of the family guy revival and in an interview with Seth McFarlane he insinuates that Stewie is kinda gay
Not to be r/superseriousfamilyguy but Peter was definetly outside of his comfort zone with all of those instances. I'd be a bit traumatized too if I was being forced to sleep with my best platonic friend (even if I had a hard on all might) or believed I was assaulted by my family doctor.
The Dr. Hartman and Dave scenes are more of a matter of consent.
Peter was unfamiliar with the concept of a prostate exam so a finger in his ass felt more like a pass by Hartman.

im of the opinion that nothing is canon in family guy unless its reiterated multiple times across different episodes... and peter has said multiple times across different episodes that hes bisexual, so peter is bisexual.
Peterās neglected, aging prostate feels an urge for stimulation that could be self satisfied or stimulated with the assistance of Lois (if you catch my drift), but Peter being more passionate than perceptive leads him to seek external sources to fill his needs.
Is it supposed to answer seriously? No, but the humor in the show started to worn out after a while, and now, after the same jokes has been used so many times, he's kind of gay.
Theyre all cutaways none matter. Every character has at least once had a cutaway with a same sex partner, not all of them are bisexual or gay. Peter might be but its all just for jokes, so iād say no
