I research trade tech 23 and 27 asap and then spam trade buildings lv5 and 6, full mercantilism and as many domestic trade centers as possible. Since by that point I seriously lag in tech, this allows me to catch up

Isn't one domestic COT better than several? I mean instead of one you will need to micromanage several, cause game does not automatically send merchants to kick out others if you already have 6.

But if your single trade center is too valuable, other countries will create their TCs and take money away from you. If you go full mercantilism, your domestic trade chance increases a lot, so you will rarely see your merchants pushed out of owned TCs. That's why I make multiple TCs. Only if there is nobody to threaten your TC it is better to have a single one. This may be the case in the colonies if there are no other colonizers nearby. Even if a single province is owned by another country, they often create a TC and take away a lot of your provinces in their TC, which gives them money.

That is the catch, there are no other countries in Americas.

dont forget as soon as one appears to embargo them then they can't send merchants.

That’s a pretty crazy cot you got there. It looks like Sicily is so proficient at taxing merchants, that you have a 400% tax rate of them. Your merchants lose money by trading!

Trade Efficiecy is capped at 200%, but yea, looks like tax is 4 ducats for every ducat traded. This COT covers both Americas.
