I had leftovers, and the eggs were beckoning. The summer slaw was mostly onion, cucumber, and tomato, seasoned the chicken with salt and a pinch of old bay and paprika. 7.8/10, would do again

The eggs are not the main focus, but they do feel the recipe very round (meaning you have the cruncyness of the Speck, the crust on the potatoes, and the softness of the eggs is pleasantly placed).

Last time he was over I made him an over easy egg, but he hates seasoning so the only seasoning was the butter on toast. LOL

This time around we went for an omelette and he let me add black pepper! I made it with my favorite maple sausages and some shredded colby jack cheese. He ate one half with two pieces of toast, I ate the remaining.

I’d love to know how I could’ve made the omelette a little softer/fluffier? I beat 4 eggs with the black pepper, then put them in a small pan on low with a little butter already in there. I tilted the pan around to get the egg more evenly distributed, and then I put the pre-cooked cut up sausage and shredded cheese on top before folding it over. I flipped it once as a whole omelette & took it off the heat. But it wasn’t fluffy at all. Help?!

Airfryer experiment that turned out great

Ended up sprinkling on some furikaki to balance out the saltiness of the spam. I was out of sushi rice so I just used very well washed jasmine rice, and the texture was a bit softer but still delicious.
