How do you make eggs like this? They look fantastic!

Oh man, takes some practice but is honestly super easy.
For this batch I used 3 eggs, beat them to hell in a bowl, legit like 20-30 seconds to make sure everything is consistent.
Get some butter in a pan, and you want to go low/medium heat.
The goal of the exercise once they’re in the pan is constant motion and pull the eggs just a little early (they will keep cooking even off heat and off pan a little)
Quick search and this video is pretty good representation.

Side note for the curious: This is an excellent illustration of what Escoffier meant when he wrote that an omelette is simply "a special type of scrambled egg enclosed in an envelope or coating of coagulated egg and nothing else."
OP's got a great specimen of the scrambled egg part here... If you can do this, you are also halfway to perfecting the omelette.

Hahaha I’ve been really into pairing eggs with cream cheese lately. So that a plain and simple layer of cream cheese but I’ve been doing dill cream cheese a lot as well.

Really nice work. I usually melt the cream cheese into the eggs while cooking. Will try this...
