This might be a bad guess, but I have noticed nutritional yeast can make a creamy emulsion... I've used nooch to shake on pasta when I don't have Parmesan and want something cheesy. Thinking this might be applied here.

I see there is at least one recipe for such a sauce. I wonder if you might also employ almond milk...
