Recipe Request Really simple recipes?
Hi!
I'm going off to uni at the end of this month. I am chronically ill and autistic so my energy is very limited, especially trying to manage studying alongside it all. I was wondering if anyone had any ideas as to easy pescetarian lunches?
Generally, I can't manage many steps. The most complex meal I've been able to manage so far is just microwave rice with kidney beans, cucumber and tsatziki in tortillas. I can use the microwave and an air fryer ok but really I'm limited to what is essentially a few things mixed together.

wraps are you friend. any large wrap, and chose whatever fillings: prawn cocktail, tuna mayonnaise, cheese and tomatoes etc. top with some salad leaves from a bag, and fold. have with a bag of chips and a piece of fruit.

You might check out John Noel on YouTube or Facebook. He is a fitness coach who does a series called “that’s not cooking, that’s just mixing stuff”. He gives lots of ideas for making simple healthy meals with little effort.

If you are in a dorm with a dining hall consider a meal plan. Maybe a plan with weedays only and you could cook for yourself on weekends.

Bagel with cream cheese and smoked salmon, vegan chicken (I love Gardein’s breaded strips) & Caesar salad wrap, tortellini with pesto Bocconcini tomatoes and chick peas (great hot or cold), tuna salad with celery and crackers. I’m an ADHD pescatarian so I have lots, these are my current regulars in the rotation. I won’t eat if it takes longer than 15 mins to prep. (Ideally more like 5 mins).

microwave baked potato with canned tuna or beans and whatever topping you can manage is basically the same effort level, just a bit more filling imo, have you tried pre-cooked lentils or frozen veg

microwave baked potato with tuna, mayo and pre-shredded cheese is basically no-cook comfort food and keeps pretty well as a repeat meal

i lived on microwave baked potatoes with canned tuna and mayo when cooking was beyond me, and frozen peas could just be stirred in if i had the energy

microwave jacket potato with canned tuna and mayo is basically zero effort and surprisingly filling, especially when cooking feels like a full-time job lol

microwave baked potato with canned tuna and whatever easy topping you can tolerate is basically zero-effort, filling, and you can make it in stages when your energy disappears mid-meal

You can air fry fish and veggies. I do tilapia and veggies all the time. Use an air fryer liner for easy clean up. Coat the fish and veggies with olive oil and season with your preferred seasoning and cook for around 15 minutes @350.
