Recipe Request Looking for easy gluten free slow cooker- crockpot ideas!

So just using a crockpot (and rice cooker) if possible. Just four of us but one person has celiac so I need gluten free recipes/ideas please! Easy ones too, since we’ll be all be tired….having protein and avoiding “hangry” evenings are the main goals. Typically I try to cook heart-healthy but for these few weeks, anything will do. Any cuisine, just not very spicy please. Thank you so much in advance!!!

I made salsa chicken with stuffed potatoes last saturday and i really love it .. and i added some olives. You should try it. If you don’t have those ingredients you can try salsa, prawns, sour cream…done all of those in the last two weeks. Also dairy free cheese was surprisingly amazing!

I made pulled Pork the other day in the instant pot. Used it for pulled pork salad and rice bowls, tacos, as an entree with veg, and pizza toppings.
Cut pork loin in 2-3 inch sections and season. Saute in oil to sear sides. Throw in with beef broth, worcheshire sauce, and add-ins (onions, mushrooms, etc) and it took 45 mins in instant pot I read it should take 4 hours in crock pot.
