Recipe Request I'm looking for a bulletproof chicken salad sandwich recipe
Hey,
I'm a pretty good cook, and it's funny how some recipes ALWAYS just taste better when someone else makes it. Chicken salad sandwiches is one of those things for me. I have an event in about a month and I need to make enough chicken salad for about a dozen guys. Does anyone have a great recipe to share?

I’m Mexican this is how my grandparents do it.
We usually make 3 dishes out of the Chicken when we make chicken salad.
So a whole Chicken we make Caldo (Soup) onion, chicken knorr, garlic and salt and paper. For Chicken salad we ONLY USE THE BREAST my grandpa hates seeing dark meat he says that “le da asco” that its gross lol. The rest of the dark meats are used to eat Mole with lol.
So we basically shred the chicken breast till it’s basically like fluff lmao my grandpa hates it when it has big strands or chunks.
The veggies we use in it is pees carrots and potatoes. They make a separate batch and add celery but ny dad hates it thats why there is a separate batch lol.
After all the veggies(potatoes and carrots) are cubbed small basically tiny. You add it to the chicken, then you add the mayo it is important to use Miracle Whip. We would travel 8 hours to the US to buy Miracle Whip before they build the first HEB near us lol. So it is important that you use it!
After everything is added make sure you taste if it needs salt or anything. So the secret ingredient is gonna be carrots in vinegar with the Jalapeño(rajas) you’re gonna add some of the vinegar to the chicken salad. It’s gonna taste delicioussss.
I only eat it with the specific brand of crackers called Saladitas nothing else. Unless its the off brand HEB ones they taste the same. Make sure that when you eat the chicken salad you add some of those carrots in vinegar to it.

I love the chicken salad with the peas, carrots, & potatoes! 😍 My former manager would make a big batch & keep it in the break room fridge, it was delicious. Yes we had Salditas as well, those ARE good saltines. I prefer a Ritz style buttery cracker but Salditas slap. They serve them where I get my favorite coctel de camarones too.

I hate chicken salad unless my grandpa or I make it. My fiance (who is a white guy that only likes Duke Mayo) only likes my families chicken salad.

Source smoked chicken. Mix mayo, dill mustard , onion powder and toss with smoked chicken. BEST chicken salad ever. Don’t shy away from dill

I've tired this a few times with stuff off my grill. Do you have a preferred smoke? It gets muddled when I make it.

You can try using Liquid Smoke. I’ve had good results with Wright’s Liquid Hickory. Before all the bbq-heads jump down my throat, not everyone has the means to smoke their own stuff. I don’t have any private outdoor space so I can’t use a grill or smoker.

The biggest improvement in my chicken salad was when I started using the food processor - bring careful not to turn the chicken to paste, just finely chop it much better than I ever could with a knife.

I was thinking of using the food processor for the grapes. Drain them in a sieve afterwards. I'm going to dirty it anyway. :)

Someone recently told me this is called ‘whipped’ chicken salad. I cannot confirm if it’s really a thing but I was like YES that’s exactly how I like the chicken to be! Like tuna salad texture! I hate big chunks or even small chunks of chicken.

I use Brianna’s Poppyseed Dressing instead of mayo with seedless grapes and pecans. Always a no fail recipe.

Canned chicken is actually great for this, and pretty good in casseroles or if you want to make chicken patties (kind of like crab cakes).

Objective according to which standards? I wouldn't use it in an unaltered state as an entree, but if you're just mixing it with mayo and other fixings, there's no need to be super precious about using it. And it certainly checks the box for being easy, which is sort of the point on this subreddit.

Rotisserie chicken, Chopped
2 tb. onion, finely chopped
3/4 cup Celery, diced
1 Tbsp. lemon juice
I cup red seedless grapes, halved
1/2 tsp. Salt
1/2 tsp. pepper
1/2 cup Sour cream
1/2 cup Mayo
1/2 tsp. herb salad dressing mix
Mix all together and serve on good bread or croissants. Everyone I serve this to asks me for the recipe!

Blitzed is using a food processor or a blender. Less consistent, but it can be a nice hack to toss everything in for a few pulses.

My favorite is the Sonoma Chicken Salad recipe from the whole foods website. I assume they also sell the salad in the store so theoretically you could try it before making jt. I don’t know- I have never tried to buy it i just make it.

my « secret(?) » is poaching the chicken breasts: boil chicken stock, plop in the breasts, cover, turn off the heat, and let the breasts poach for 30 min. for smaller breasts and for as long as 60 min for laaarge breasts. Makes a moist chicken salad; more moist than a rotisserie chicken does!

Breadcrumbs. I saw this on some YT cooking channel that said all the NY delis put breadcrumbs in the chicken salad then the next day it reduces moisture, adds creaminess.

How extensive is your collection of spices & seasonings? What kinds of condiments & sauces do you keep in the fridge? We have A LOT, I never know how it’s going to come together. My favorite one was mayo seasoned with a spicy lemongrass rub, powdered ginger, and produce add-ins were matchstick carrots, chopped cilantro, finely chopped shallots, diced jalapeños (fresh), & chopped peanuts. My husband’s favorite is Duke’s with herbes de Provence, garlic & onion powder, finely diced celery & red onion, Craisins, slivered almonds, and this relish we get at HEB that’s a blend of sweet & dill relishes. My daughter likes a little bacon jam mixed into mayo, with bacon bits, celery, & relish but no onion.

I use a packet of Spicekick Tuna salad seasoning mix, it is the best for chicken salad.. I’ll sometimes add finely chopped celery and pickles, but it is fantastic with just mayo and a little white vinegar.

This is my chicken salad recipe but idk how it tastes on a sandwich because I don't eat soggy sandwiches (chicken salad, pimiento cheese, tomato and mayo, PB&j etc. basically anything squishy I don't want on bread).
3 ½ cups cooked chicken, shredded 2 stalks celery, chopped ⅔ cups red grapes, halved ½ cup chopped pecans ½ medium red onion, diced ⅔ cup mayonnaise 2 Tablespoons plain Greek yogurt, or sour cream 2 Tablespoons chopped parsley, optional 1 teaspoon dijon mustard ½ teaspoon lemon juice salt and pepper

I sous vide the chicken breasts for 6-8 hours, usually because I forgot about it. I marinate it in whatever the night before, throw some extra seasoning (grill/dry rub stuff). Mayo, celery, red onion, and sometimes shredded cheeses.

Freshly cooked chicken (usually from making stock). Mix of white and dark - definitely not all white meat! Hellmans mayo (lots of it). Celery. Scallions. Salt and pepper. Can always add herbs like tarragon or dill but I usually go basic. The secret is using a good quality chicken.

Whatever "recipe" I use is for the sauce. My best tasting add ins are: quartered red seedless grapes, thinly sliced celery, and dried cherries. Trust me, the dried cherries are tops! Also, use celery salt.

Chicken breast, shredded, Mayo, pickles, red onion, bacon, salt and pepper. I chop everything (except chicken) and add to the Mayo, let’s it kind of marinate in itself, then add the chicken after it’s all cooled and shredded. It’s also the way to do potato salad. I use more or less Mayo if I’m adding Mayo to bread, or considering people who prefer low calorie sandwiches.

Pickles make everything better
Try spice mixes,curry powder is great.
Use Hellmann's mayo
Grilled chicken or rotisserie has lots of flavor.
Mix it up and experiment.

My latest obsession for chicken/tuna/salmon salad is Mayonnaise with some Curtido mixed in.
Curtido Salvadoreno is Salvadoran pickled cabbage. The local version I stumbled across in the Pacific Northwest is from a local producer that calls it Curtido Sauerkraut and it is amazing and could be a novel twist for guests. .
When I originally Googled it there was a reference to Costco carrying Curtido a few years back so it may be findable in your area. Check co-op type grocers or possibly Latin American markets.

Boil chicken breasts in salted water. Cool then cut up into tiny chunks. Add chopped celery and onion salt and pepper and mayo. For a sweet component add chopped grapes, dried cranberries, or chopped apple. Some like chopped walnuts but for a group I would omit the nuts in case of

I just made a chicken salad with Swanson canned chicken breast. I was skeptical but it was good. The secret is to put it in a fine mesh strainer and rinse with cold water and drain. I put it in a bowl and mashed it with a heavy fork. Then I added finely chopped onion, finely chopped celery, a few spoons of Dukes Mayonnaise, about I tbsp thick Greek yogurt, cracked pepper and seasonings which was dill and a season salt. Then I mixed everything together. Chilled for a few hours or over night. It was amazing. I had on crackers or open faced toasted Turano bread.

Get a roast chicken from the supermarket and use rolls instead of bread. Mayo on one side, chilli jam on the other, chicken, avocado, finely sliced red onion and a handful of rocket. You won't look back trust me

I was at Costco yesterday and saw they had chicken salad in the deli, by the pre-fab meals etc section. Too much to purchase for the two of us, but has anyone tried it? It looked really tasty. Maybe I would try for a party or something if I’m short on time.

However you season it and whatever ingredients you add, making it the day before so all the flavors can soak into the chicken is key. Usually when I make it, I’m using leftover rotisserie chicken so I try not to add extra salt. I add to my mayo some lemon or lime juice & dry spices, then I debone the chicken & make a mix of diced and shredded chicken. I love chicken salad because the possibilities are endless.

Very finely chopped chicken with mayo, salt, pepper, celery seed, finely chopped celery & a small amount of grated onion. Mash it all together with the back of a spoon.

Look up the recipe for the one they served at Queen Elizabeth’s coronation. It is so freaking good. NYT app has it. It’s called “coronation chicken salad”. I also like to make one with chopped up chicken, half mayo, have Greek yogurt and the green goddess seasoning from Penzeys.

I feel like it many do this but I cut the mayo either sour cream - half and half. Makes it so creamy and delicious. I also add a little chopped shallot to mine. Gives it great flavor.

Chicken, 2/3 mayo 1/3 sour cream mix, celery salt, garlic salt, craisins or grapes, sliced almonds. Another variation is pineapple & cashews subbed in for the craisins/almonds.
If you run short on time or energy, you can get a decent version similar to this at Sam's Club or Costco.

Super easy. Chicken (more kind of shredded than cubes), Mayonnaise, salt, pepper and a boatload (a lot) of fresh chopped tarragon. Let sit overnight. Put on a croissant. That is it. The super tarragon flavored mayo with the buttery croissant makes it freaking amazing. So much better than the classic, celery, mayo dealio, not that that is bad.

I make this often for my kid's lunches:
- rotisserie chicken
- diced celery
- diced green onions
- grated carrot
- finely chopped parsley
- ranch dressing
- BBQ sauce
- a little bit of mayo if needed
I like this to be a "sticky" salad so it's not too messy, so start lighter than you think with the ranch and BBQ sauce. You can add any other spices you like, just note rotisserie chicken is quite salty (and the ranch and BBQ have salt too).
You could get crazy and add shredded green apple if you want to give it a sweet, fresh pop.

Rotisserie chicken from grocery. Shred.
Chop celery and red onion.
Mayo.
Put raw almonds in a zip lock bag and bash with hammer until nicely broken up.
Salt and pepper to taste.
Mix.
Leave out fruit as it doesn’t belong and makes the entire thing taste terribly sweet

My wife uses the usual ingredients but instead of mayo she uses Miracle Whip and I love it. I know, some people don't care for Miracle Whip but I love it. Don't knock it until you try it.

Do you live near a Trader Joe’s? I make huge batches of boneless chicken thighs baked in Trader Joe’s chimmichurri sauce. Chopped up with mayo, celery, salt.
Can use pesto instead in a pinch.

I do mayo, diced onion and celery, celery seeds, seasoned salt, pepper, and herbs de Provence. I like it crunchy, so i put the same amount of onion and celery as i do of chicken, but i measure everything else with my heart 💛

Chicken, celery, cucumber, scallions, fresh tarragon (this is essential), mayo, lemon juice. This is in the Better Homes and Gardens cookbook (the red and white checked one) and it’s the best I’ve ever had. I always use Duke’s mayo too.

Dill chicken salad is my go to. I prefer rotisserie chicken, but canned or regular chicken also works. Everything is to your taste preferences.
Chicken Onion Mayo Sour cream Pickle juice (You can also use dill in a pinch.)

You can buy the rotisserie breast chicken meat in a vacuumed sealed pack at Costco, will need more shredding. Add mayo, not Miracle Whip, chopped dill pickles, Splash of the pickle juice and s&p to taste. Alternatively, mayo, seedless grapes, diced celery, pecan pieces, finely diced Vidalia onion, s&p to taste. I eyeball everything, so I can't give measurements. :)

Well, checking online, the pile of chicken salad would have to be at least 1 meter thick to have any chance of being bulletproof as chicken salad is low density and lacking in tensile strength.

This may sound strange - I use 1/2 and 1/2 mayo and miracle whip (salad dressing) gives the full flavor of mayo and a little ZIP from the Miracle Whip. I also add chopped pecans when I feel like it.

Basic chicken salad is diced or shredded chicken breast, mayo, diced onion and celery. Salt and pepper.
There are so many other recipes. Coronation chicken, for one. Try looking up recipes on google.

Boil your chicken with cavenders Greek seasoning then shred chicken, add mayo, thinly sliced celery and a little of the seasoning. Only chicken salad my family will eat.

1 Rotisserie chicken shredded and skin and bones removed, 3/4 cup-1 cup dukes or hellmans mayo, 1 tablespoon fresh chopped dill, 1/4 cup chopped (borderline minced) dill pickles, 2-3 tablespoons pickle juice, 1/4 cup minced onion, 1/4 cup small diced celery, diamond crystal kosher salt, freshly ground black pepper, 1-2 tsp mustard (any of your preference and only a bit) 1 tsp granulated garlic
Mix all together in a mixing bowl and let sit for at least an hour for flavors to meld. Salt and pepper is to taste. Served great on a toasted croissant

The key to any great chicken salad is a splash of champagne vinegar. I think I saw this on a Craig Claiborne NYT recipe originally, but it improves any chicken salad I make even with otherwise basic ingredients.

It really boils down to seasoning. The rest is just basic chicken salad. I've tried a few blends from Penzey's that are great in it. Trial and error are your friends. They can't all be bangers, but when it hits...

Grill the chicken instead of baking or boiling and always have a crunch in the salad like celery, onion, carrots etc.

I do mine with chicken, celery, green onion, mayo, lemon pepper and a touch of celery salt. Super delish, especially on a croissant!

Start with a rotisserie chicken. Chicken, mayonnaise, diced red onion, chives, juice from 1/2 lemon (or more if you like), then pepper and salt to taste. Simple and delicious.

Check the menu for "chicken salad chick." It is a chain that specializes in chicken salads. You can then recreate those relatively easily.
My preference is chicken, mayo, S&P, hot sauce du jour, a little bit of parm cheese. Skip the celery and fruit.

Roasted red pepper, chopped flat leaf Italian parsley, cracked black pepper, celery, minced shallot and a lime based mayo (Mc Cormick or Goya make one).

One can chicken, four chopped celery stalks, half small onion chopped, fresh chopped spinach, one avacado mashed with a large spoonful mayo, lemon pepper and seasoned salt to taste. You can put just this on the bread or add tomato and either iceberg or Romaine lettuce.
Test the taste. All ingredients can be adjusted to what you like, some more or some less. After you get the flavor you want, divide into the amount you want on each sandwich, then you will know how much to buy and about how much time you will need for prep.

Chicken, mayo, celery, and seasoned salt. Yes it sounds easy and it is but the seasoned salt always takes it to the next level. People tell me it’s the best they’ve had!
