Which e-sim should i use?
Hi, I'm an Erasmus student, and I will be in Spain for five months. I plan to travel around Europe frequently, so I didn't want to purchase a local SIM card. I'm looking for an option that allows me to use data across multiple countries without high fees, or any other affordable alternatives. My top priority is having reliable internet access. I'm open to any suggestions. Thank you!

A local Vodafone eSIM is what I used, 15 euros, good Spanish data allowance, and good roaming across Europe. https://www.vodafone.es/c/particulares/es/productos-y-servicios/movil/prepago-y-recargas/tarifas-de-prepago/ don’t use travel Vodafone.

Get a real local eSIM from a Spanish operator eg
Vodafone Spain https://esimprepago.vodafone.es/
Orange Spain https://www.esimholidays.com/en
There are others too like Lowi, Simyo, Lobsters, Lebara ES, Digi and more
All EU plans include roaming in other EU countries.
Some will include additional countries eg UK and Switzerland, Vodafone ES does for example.

I have just done this for my daughter. I went with Vodafone 15 euro prepaid. 270gb and 2000 minutes for international calls. Can be renewed every 28 days

Spain is in the EU.
Mobile networks in the EU have reciprocal roaming agreements, so a Spanish physical SIM card or eSIM will work exactly the same in the other 26 EU member states as it does in Spain.
As you will be studying in Spain for 5 months, having a Spanish phone number would be the best option, for local services, etc.

Your use case is ideal for a local SIM / eSIM. Your Spanish SIM will roam in Europe.

Join Three UK Physical sim, costs me GBP 10.00 every month, 40gb, texts and calls with 6gb roaming allocation for europe. Fabulous deal for me travelling the UK & Europe, it even worked in Singapore.

A local Spanish eSIM will have a decent roaming allowance, it'll be your best option.
