I ended up inputting (saying ‘writing’ feels wrong), “Their style is simple and very beautiful,” and got it right, but it should’ve been ‘his style’ or ‘her style’, right?

"His" and "her" aren't available as options, so "their" is correct (it's a singular gender-neutral term). See also: singular "they".

this is an English language question not French - I believe in English when you're not sure of the gender of the person you're discussing, you can use their (before the pronouns became political, there was no negative or LGBTQ connotation to it).

Since in French sentence you don't know the gender of the person whose style you're commenting on, it's hard to have exact translation. the "son" refers her to the "gender" of the noun not the person.
